Coffee drinks split into two groups. Alcoholic ones — Espresso Martini, Irish Coffee, White Russian — where coffee provides a bitter counterweight to the liqueur. And alcohol-free syrup drinks: caramel latte, raf, iced coffee with vanilla or hazelnut.

For syrup drinks the standard measure is 15–17 ml of syrup per 200–250 ml of finished drink. Less does not register; more buries the coffee. Add the syrup to the coffee rather than after the milk so it dissolves evenly. For cold drinks choose a sugar-based syrup — it will not settle out in the ice.

Frequently asked questions

How much syrup goes into coffee?

15–17 ml per 200–250 ml serving — one full pump. A smaller dose does not register against the coffee; a larger one overrides it and makes the drink sickly.

Which syrup works best with coffee?

The steadiest sellers are caramel, vanilla, hazelnut, salted caramel and Irish cream. None of them fight milk, and all work hot or iced.

How do I make an Espresso Martini?

50 ml vodka, 30 ml coffee liqueur, 30 ml fresh espresso and 10 ml sugar syrup. Shake hard with ice — the shaker is what creates the signature crema on top — and strain into a chilled glass.
