A homemade lemonade is three components: syrup, acid and sparkling water. The only difference between recipes is which syrup and how much juice. The base ratio for a 300 ml glass: 30–40 ml syrup, 20 ml fresh lemon or lime juice, topped with soda or plain sparkling water over ice.
For a 1.5 l jug the same ratio multiplied by five applies, but add the syrup gradually — fruit syrups vary noticeably in sweetness, and it is easier to sweeten at the end than to rescue an over-poured jug. Add ice last, or it will dilute the drink before it reaches the table.
Buy lemonades30–40 ml of syrup per 300 ml of drink, plus 20 ml of lemon or lime juice. The exact dose depends on the syrup — start at 30 ml and sweeten to taste.
Tonic contains quinine and its own bitterness alongside sugar, so the drink comes out more complex and reads as less sweet. Plain sparkling water is neutral and leaves the syrup's flavour clean.
For 1.5 l: 180 ml syrup, 100 ml fresh lemon juice, 1.2 l sparkling water. Mix syrup with juice, top with water, taste, and only then add ice and mint or citrus wheels.
