Sparkling wine in a cocktail is a full ingredient rather than a top-up: the bubbles carry aroma and make the drink lighter than any spirit-based alternative. Wine and sparkling wine are therefore the base of celebratory drinks, from a breakfast Mimosa to a Kir Royal.

Sparkling wine always goes in last and is never shaken — a shaker strips the gas out. Pour down the side of a tilted glass and stir once at most. Choose a dry brut for mixing: sweet sparkling wine alongside juice or liqueur produces a cloying result.

Which sparkling wine should I use for cocktails?

A dry brut — prosecco, cava or a Ukrainian brut. Juice or liqueur will already bring the sweetness, so a sweet sparkling wine makes the drink cloying.

How do I make a Mimosa?

Equal parts chilled sparkling wine and fresh orange juice in a flute. Juice first, then wine down the side of the glass to limit the foam. No ice needed — both ingredients are already cold.

Why can't sparkling wine go in the shaker?

Shaking drives out the carbon dioxide, leaving the drink flat, and the pressure can blow the shaker lid off. Sparkling wine is always added last, straight into the glass.
