Quick answer: a mocktail is a cocktail without alcohol, where syrup or juice replaces the (usually alcoholic) base. The proportions are the same as in a regular cocktail: 30–45 ml of syrup per 150–200 ml of soda, tonic or juice.

Virgin Mojito: 20 ml Mint-Lime syrup, lime juice, muddled mint, soda, ice — the same flavour as a classic mojito, without the rum.

Cherry Cooler: 30 ml Cherry syrup, tonic, a lemon slice, ice — a bittersweet balance without being cloying. Ginger Fizz: 25 ml Ginger syrup, soda water, a dash of lime juice — spicy and refreshing.

Berry Lemonade: 15 ml each of Strawberry and Raspberry syrup, lemon juice, sparkling water, plenty of ice. Tropical Sunset: 20 ml Passion Fruit syrup, orange juice, grenadine for a gradient at the bottom of the glass.

All five recipes work just as well with alcohol — just add 30–40 ml of rum, gin or vodka whenever you want a stronger version of the same flavour.
