Aperol Spritz: the classic recipe and what to use instead of prosecco

Quick answer: the classic Aperol Spritz ratio is 3-2-1: 90 ml prosecco, 60 ml Aperol (or BrandBar's bitter liqueur), 30 ml soda water. Fill a balloon glass with ice, pour in that order, stir gently with a single spoon — this keeps the bubbles longer.

The pouring order matters: prosecco first (it carries the most bubbles), then the liqueur, then soda water last. Stir everything together vigorously and the spritz will go flat fast.

No prosecco? Swap in a dry white sparkling wine, or even chilled soda water with a splash of dry white wine — the result will feel less festive, but the bitter-sweet balance holds up.

The classic garnish is an orange wedge dropped into the glass: its oils lift the bitterness of the liqueur. For an alcohol-free version, just replace the prosecco with tonic or soda water and a splash of lime juice.
